I cannot get enough of this soup (in fact I am eating it for breakfast as I type)! I have tried different recipes and finally ended up combining a few different ones and winging it a little to get the perfect combination! It's so good that even my 4 year old had 3 bowls! I have gotten quite a few requests so I thought I would post it on the ole' blog for whoever is interested! I served it with warm Kings Hawaiian Rolls because they are my families favorite! Enjoy
Kale Lentil Veggie Soup
Extra Virgin Olive Oil
1 Chopped white onion
4 stalks chopped celery
2 big chopped carrots
4 cloves chopped garlic
1 can white beans un drained
1/4 to 1/2 teaspoon red pepper flakes
2 Tablespoons Tomato paste
Almost 8 cups veggie stock/broth
1 cup dried lentils
2 bay leaves
salt & pepper
4 big leaves of Kale chopped and sautéed in olive oil for about 5 mins
Boil water then pour over and cover lentils. Let sit for 15 mins
Saute onion, carrot, celery, garlic & red pepper flake in evoo till they are a little soft.
Add tomato paste and cook for 2 minutes
Add broth/stock, Lentils and canned beans un drained, Bay leaves, s&P and sauteed Kale.
Cook until the beans are done to your liking. Usually about 30 mins. I keep testing.
